Creamy Chorizo & Chicken Pasta. High Protein, High Carb In just 20 minutes,

Ingredients for 4 serves .


  • 4 average-sized chicken breasts (approx. 150g each)

  • 1 tin of chopped tomatoes (400g)

  • 300g (10.6 oz) rigatoni

  • 10 cherry tomatoes, halved

  • 150ml (5 fl oz) single cream (substitutable with low-fat cream)

  • 1 medium-sized yellow pepper, diced

  • 1 tsp Italian seasoning

  • 1 medium-sized red pepper, diced

  • 1 medium-sized brown onion, chopped

  • 80g (2.8 oz) chorizo, diced

  • 4 cloves of garlic, minced

  • 1 tsp olive oil

  • 1 tsp paprika


For a lighter version, opt for low-fat cream instead of regular single cream to cut down on calories while maintaining creaminess.


Step-by-Step Preparation


Preparing the Chorizo and Vegetables


Start by chopping the chorizo into small pieces. In a large pan over medium heat, add the olive oil and then the chorizo. Cook for about three minutes or until it begins to release its oils and turn slightly crispy.


While the chorizo cooks, bring a pot of salted water to a boil. Peel and chop the onion, deseed and dice the yellow and red peppers, and set them aside.

Once the chorizo is cooked, add the chopped onion and peppers to the pan. Sauté the vegetables until the onion is translucent. Add the minced garlic and cook everything together for another minute, allowing the flavors to blend beautifully.


Cooking the Pasta


While the vegetables are sautéing, add the rigatoni to the boiling salted water, cooking it al dente according to package instructions (typically around 14 minutes).


As the pasta cooks, dice the chicken breasts into bite-sized pieces. Once the vegetables are nicely sautéed, add the chicken to the pan.


Bringing It All Together


Stir the mixture frequently. After about ten minutes, reduce the heat and pour in the single cream. Allow it to simmer on low for two minutes.


Next, add the chopped tomatoes along with Italian seasoning and paprika. Cook on medium to high heat for an additional ten minutes. This step is crucial as it thickens the sauce and enhances the flavors considerably.


Combining Pasta with Sauce


When the pasta is al dente, drain it, but save a little pasta water in case you need it. Add the drained rigatoni to the pan with the creamy chorizo and chicken mix.


Mix everything thoroughly, ensuring the pasta is well coated with the rich sauce. If needed, add a splash of the reserved pasta water to achieve your desired consistency.


Final Touches


Once thoroughly combined, your Creamy Chorizo & Chicken Pasta is ready to serve! For added freshness, garnish the dish with halved cherry tomatoes and a sprinkle of fresh parsley. You can also add grated parmesan cheese for an extra layer of flavor.
